“I want my great Thai food back!” Review of Busaba Eathai

Last weekend, I caught up with my lovely family for my brother’s graduation at Kingston Uni. We always seem to end up in the same two places whenever my parents come to visit  – The Druids Head, Kingston-Upon-Thames (a great central pub with a cute pub garden for the Summer and wood fireplaces and mulled wine in the Winter), and then Busaba Eathai: One average Thai dish too many! I used to really rate Busaba Eathai. I first visited the Shoreditch branch around three years ago when the restaurants were only in Central London locations (no shopping centres) and the food was amazing – the jungle curry nearly blew my face off, in a really good way. But now they seem to have sold out, opening restaurants here there and everywhere, each with less charisma than the last. Vouchers and offer codes have taken over, and now it’s the sort of place that you’d never go unless you were getting at least a 25% discount (just like Pizza Express or another below average soulless chain.) Popty Ping – MasterChef and my homage to last year’s winner

‘Popty Ping’ means microwave in welsh. Although there is not a microwave in sight in the below recipes, it does give a clue as to the inspiration for the Malaysian dinner party I hosted a few weeks ago for my nearest and dearest, in celebration of my upcoming TV debut. And the loose theme I chose was Malaysian, as an ode to last year’s MasterChef Champion 2014, the fabulous Ping Coombes. It was Ping’s flawless home-style Malaysian cooking and attitude to food that prompted me to submit my application! From the beginning her dishes were amazing, giving John and Gregg, and the viewers at home a real culinary lesson. She cooked from the heart, using flavours and techniques learnt from her family, and made everyone realize that you don’t have to dine out in expensive restaurants to know about amazing food. Ginger & Sesame Cod with Broccoli & Avocado Cold Tossed Courgette Noodles

Ginger & Sesame Cod with Broccoli & Avocado Cold Tossed Courgette Noodles (2 portions) For the cod marinade: 1 garlic clove, 1 inch of ginger 1 tsp fish sauce 1 tsp dark soy sauce 1/2 tsp each black & white sesame seeds For the noodles: 2 courgettes 1 tsp soy sauce 1 tsp fish sauce 1/4 a head of broccoli 1/2 an avocado First bash the garlic clove and ginger with the flat side of a thick knife and brush on a chopping board until minced. Add 1/2 the paste to the rest of the marinade ingredients, brush over the fish and marinade for at least 20 mins. For the noodles: I’ve got a nifty gadget that will turn vegetables into spaghetti (see below – under £2 from Amazon ;)) but you can also use a vegetable peeler to make long thin strips, then slice length ways into noodles. Place the noodles in a bowl with the rest of the garlic and ginger paste, soy sauce and fish sauce. Roughly mash the avocado until creamy with a few chunks …
